I recently picked up this book. It is full of great cupcake ideas and supposedly they are easy. The book says no special equipment is needed and most of the recipes are from a box of cake mix and a can of store bought frosting.
Now that I'm a mom--I figured baking cool cakes is something should be good at doing. You may recall my fabulous football cake from a few years ago.
So this time using the techniques in the book--I attempted football cupcakes. I started with a regular french vanilla cake mix, but substituted 1 cup buttermilk in place of the water and 4 eggs instead of how many the box called for. It really did create a light and fluffy cupcake in which I then decorated like a football in honor of Ami's fantasy football draft. 
Not bad for my first try--but I do need to work on my piping skills.
